Salla Chaaru

Salla in Telangana slang is buttermilk. This is a perfect summer delicacy which is very commonly prepared in every household of Telangana. This is totally different from Andhra style majjiga chaaru/menthi majjiga(Andhra style is posted in the blog). Here I present Telangana delicacy salla chaaru to relish anytime. Cuisine: Telangana, India 

Servings: 4-6

Ingredients:

Curd: 750 ml or 3 cups approximately 

Water: As required to get the desired consistency 

Salt: As required 

Turmeric: Generous pinch 

Mustard seeds: 1 tsp

Green chillies: 2/3 nos.

Tempering:

Ghee: 1 tsp

Mustard seeds: 1 tsp 

Cumin seeds: 1 tsp

Garlic flakes: 3/4 nos.

Red chillies: 1/2 nos.

Curry leaves: A sprig 

Asafoetida: A pinch

Method of preparation:

🌷. Take 750 ml or approximately 3 cups of buttermilk. Churn it well to get uniform consistency. Add half cup water to get the desired consistency. {If you like sour taste use leftover curd . Here I’ve used leftover curd)!

🌷. Fire roast 2/3 green chilies on stove top (Or using charcoal which gives best smoky flavour… I couldn’t do in this lockdown time ) and crush them Coarsely in a mortar pestle.  Add this paste to buttermilk.

🌷. Now take one tsp of mustard seeds in a mixer grinder or mortar pestle . Make them into fine powder adding required amount of salt and turmeric. Also add this powder to buttermilk and Mix  thoroughly.

Tip: Whenever you grind mustard seeds add atleast generous pinch of salt., bcoz it helps mustard seeds to grind into fine powder and it doesn’t change into bitter taste. 

🌷. Now heat small kadai and pour two tsp of ghee for tempering. Ghee tempering  enhances the taste of recipes made out of curd.  Add mustard and cumin seeds. When mustard splutter add 4/5 crushed garlic flakes , asafoetida , curry leaves and red chillies. Switch off the flame and add the tempering to the seasoned buttermilk. 

Enjoy the Telangana style Salla chaaru  with hot steamed rice along with other delicacies.
