This is Karimnagar district’s (Part of Telangana) recipe and popularly known as rail palaram across Telangana state. We know Secunderabad is headquarters of South Central Railways and several trains pass through twin cities to different parts of the country. Train journey is so much fun and earlier people used to carry their home cooked food for consumption during travel particularly this recipe for the travel. It used to help them stay healthy and keep away from diseases. But these days due to life style changes and also since food🥘 is abundantly available everywhere, travellers are rarely taking home cooked food. Now, this pandemic urges us all to follow our elders right?

Ingredients:
Rice flour: 1 cup
Water: 1 cup
Salt: As required
Tempering:
Oil: 2 tsp
Mustard seeds: 1 tsp
Cumin: 1 tsp
Black gram: 1 tsp
Curry leaves: A sprig
Green chillies: 2 nos.
Asafoetida: A pinch
Finely chopped ginger: 1 tsp
Fresh grated coconut: 1 tbsp(Optional)
Crushed cashews: For garnishing
Method of preparation:
🌾. Take one cup of water in a vessel and bring it to boil. Now add one cup of rice flour. Switch of the flame and mix thoroughly without forming any lumps. Grease your palms with little ghee and Make a smooth dough.
🌾. Now make tiny balls (which are almost peanuts size ) from the prepared dough. Now carefully grease the idly moulds with ghee and carefully place all the prepared tiny balls in them.
🌾. Steam them in a pressure cooker or idly cooker for 10-15 minutes or till they are completely cooked.
🌾. Heat kadai and pour oil for tempering. Add mustard seeds, cumin seeds and black gram. When mustard splutter add a pinch of asafoetida, chopped ginger, Chopped green chilli and fresh coconut.
🌾. Now add the steamed tiny balls into the tempering and mix thoroughly.
🌾. Now the delicious rail palaram is ready. Garnish with crushed cashews and enjoy.
Tip:
If you want to pack this for travel skip coconut so that it stays good for longer hours.
