Paneer Bites

Paneer bites is a fusion recipe from Akshayakumbham s kitchen. Paneer is cut into long thin strips and dipped in seasoned batter , later deep fried. Fried paneer bites are stuffed with masala peanut mixture. Here I present tempting paneer bites to relish this rainy season. Njoy Cooking, Serving n Savoring!

Ingredients:

Paneer: 100-150 gms

Besan flour: 3/4 th cup

Water: As required 

Dry oregano: 1 tsp

Red chilli powder: 1 tsp 

Salt: As required 

Baking soda: A pinch 

Oil: As required for deep frying 

For stuffing:

Roasted peanuts: 1 tbsp

Onion: 1 no. Small finely chopped 

Coriander leaves: Few

Lemon juice: 1 tsp

Salt: A pinch 

Red chilli powder: As required 

Garam masala: Half tsp

Method of preparation:

🌷. Cut the paneer into thin long strips and keep aside. Prepare batter using 3/4 th cup Besan flour, required amount of salt, dry oregano, half tsp red chilli powder , a pinch baking soda and required amount of water. Mix thoroughly. Meanwhile heat kadai and pour required amount of oil for Deep frying.

🌷. Temperature of the oil plays important role for any deep frying recipes. To check the temperature drop lil batter into the oil , when the batter comes up immediately its ready to fry.

🌷. Dip the paneer strips in Besan batter and Coat the paneer strips evenly and carefully drop them in hot oil. While dropping them keep the oil on high flame for few seconds and turn to medium flame later. Fry them on both sides for two minutes and transfer onto a plate containing paper towel. At a time fry only 3/4 paneer bites. Likewise fry two batches of them and again transfer the fried paneer bites into the hot oil. Now keep on medium flame and fry for one more minute.(Adjust accordingly to get the nice colour) . This is called double frying. This helps the paneer bites to retain its crunchiness and also fries evenly. Follow the same procedure  to fry all batches . Same is applicable to any deep fried dishes. 

🌷. Transfer the fried paneer bites onto a plate containing kitchen paper towel to absorb excess oil. 

🌷. Now cut the paneer bites into halves . Prepare mixture for stuffing with finely chopped onion pieces, a pinch of salt, red chilli powder, garam masala and roasted peanuts. Mix them thoroughly and stuff the paneer bites.

🌷. Paneer bites are ready to relish. It’s a kids friendly snack too. Plating is done with paneer bites, ketch up , onion rings, coriander leaves and lemon wedges 😍😍!!
