Pancharathan Dosa
Pancharathan Dosa from Akshayakumbham’s kitchen. Absolutely yummy n so healthy. This is an instant dosa which can be prepared in a jiffy if all the ingredients are readily available. Here I present delicious pancharathan dosa to serve any day. Njoy Cooking, Serving n Savoring!

Ingredients:
Ragi flour: 1 cup
Rice flour: 1 cup
Wheat flour: 1 cup
Sooji/Bombay Rava: 1/3 th cup
Salt: As required
Ajwain leaves: 1/2 nos.
Coriander leaves n Curry leaves: Few
Cumin: 1 tsp
Asafoetida: Generous pinch
Method of preparation:
🍃. Take equal quantities of ragi flour, Rice flour, wheat flour (Approximately one small cup each ) , 1/3 cup Sooji/Bombay Rava and finely chopped 1/2 nos. vamu aaku /doddapatre or Ajwain leaves. I’ve used these as five main ingredients, hence the name. Now add required amount of salt, black peppercorns, finely chopped coriander leaves n curry leaves. Also add generous pinch of asafoetida and one tsp of cumin seeds. Add required amount of water to get thin flowing consistency. Rest the batter for 10-15 minutes and it’s ready to pour dosas.
🍃. Heat Tawa and season well with a drizzle of oil and water. Pour dosas using prepared batter. Roast them on medium to high flame till it’s done completely. Drizzle little oil while roasting.
To Garnish:
🍃. I’ve used chintakaya bellam pachadi which my MIL made n sent for us. My version is also there. Usually it’s prepared with tamarind thokku (Andhra special). One cup of tamarind thokku is used. Dry roast 1 tsp of Coriander seeds, fenugreek seeds, mustard seeds, split black gram with husk along with 12/15 red chillies and grind into fine powder. To this add required amount of organic jaggery powder(3/4 th cup) and grind them again. Also tamarind thokku has enough salt so no need to add salt.
🍃. Prepare tempering with mustard seeds, generous pinch of asafoetida using sesame oil.
This pachadi/chutney is very good accompaniment to any dosa, idly or hot. steamed rice . This pachadi is prepared with old tamarind thokku which is good for lactating mothers, pregnant women and who recovered from fevers.
🍃. Spread the tamarind chutney onto the prepared dosas and garnish with chopped coriander leaves and crushed almonds, cashews and pistachios. Super delicious breakfast to kickstart our day !!!
