Unique Double Coated n Stuffed Andhra Mirchi Bajjis!

These kinda mirchi bajjis are popular street food of coastal Andhra Pradesh. The stuffing has mesmerising aroma and quite addictive. Great treat for spice lovers. Here I present tempting mirapakaya bajji to serve as an evening snacks. Njoy Cooking, Serving n Savoring!

Ingredients:
Besan flour: 1 cup
Salt: As required
Red chilli powder: 1 tap
Baking Soda: A pinch
Oil: For deep frying
Water: As required to prepare batter
Stuffing(Before frying):
Tamarind extract: 1 tbsp
Besan flour: Half tsp
Garam masala: Generous pinch
Salt: As required
After frying:
Roasted peanuts: 1 tbsp
Onion: 1 no. Small
Coriander leaves: Few
Lemon juice: 1 tsp or as required
Method of preparation:
🌶. Stuffing includes two stages, one before frying and the other after frying!!
Take two tsp of thick tamarind pulp which extracted approximately from a small lemon sized tamarind. Add required amount of salt, red chilli powder, pinch of garam masala and one tsp Besan flour. Mix thoroughly and remove the seeds from green chillies. Now stuff the required green chillies with the prepared stuffing.
🌶. Prepare Besan flour batter(the batter should be little thick compared to regular bajji batter) to coat the green chillies. Coat the stuffed mirchis with Besan batter and deep fry in hot oil. Remove them from oil once they are 90% fried and coat again with Besan batter and deep fry again in hot oil. Remove and transfer onto a plate containing kitchen paper towel to absorb extra oil(Since the batter is thick it did not absorb much oil).
🌶. Now prepare stuffing with a mixture of finely chopped onions, red chilli powder, lemon juice , roasted peanuts, chopped coriander and required amount of salt. Heavenly delicious 🤤!!!
