Telangana state has unique culture and traditions. The festivites (Bathukamma, Bonalu, Jataralu, etc…) of this region are very popular and celebrated with much vigor. Each festival is an epitome of a perfect balance between nature, seasons, people and food. Offering / consuming different varieties of food 🥘, is an integral part of these festivities. The cuisine of this region is so versatile and culminates local and Nizami cuisines. Some of the state’s delicacies are sakinalu, chegollu, karam sakinalu, pappu, ghatu chaaru, potlakaya billalu and so on… With time, change in life styles and urbanization, some of these delicacies are slowly getting forgotten. Godhuma Pindi Paasham/payasam {Wheat flour kheer/pudding} is one such delicacy which can be very easily prepared .

Ingredients:
Wheat flour: 1/2 cup
Jaggery: 2-1/2 cups
Cardamom: 3 – 4 pods
Cashews and raisins: 1/2 tbsp
Ghee: 2 1/2 tsp.
Method of preparation:
🌹. Take half cup of Wheat flour and add one cup of water. Mix thoroughly and avoid forming lumps. Keep aside. Meanwhile prepare jaggery syrup in a kadai/pan. Also add crushed cardamom pods.
🌹. Bring it to boil and slowly add the wheat flour slurry. Mix thoroughly and cook for five minutes or till the raw smell goes away. Also Add two tbsp of ghee .
🌹. In a small Kadai add one tsp of ghee and fry cashews n raisins.
🌹. Transfer the cooked mixer into a serving bowl and garnish with fried dry fruits. Delicious 😋!!
