Ingredients :
Bhendi/lady finger: 750 gms.
Oil: 2 tbsp
Tamarind: Big lemon sizes
Salt: As required
Turmeric: Generous pinch
To grind:
Bengal gram: 3
Black gram: 2 tsp
Coriander seeds: 2 tsp
Cumin: 1 tsp
Red chillies: 5/6 nos.
Tempering:
Oil: 1 tsp
Bengal gram: 1 tsp
Black gram: 1 tsp
Mustard: 1 tsp
Cumin: 1 tsp
Asafoetida: A pinch
Curry leaves: A sprig
Red chilli: 1 no.
Method of Preparation:
🌸. Heat kadai and pour oil. Add chopped ladyfinger pieces into it. Add required amount of salt and turmeric. Sauté them till they become soft.
🌸. Meanwhile dry roast Bengal gram, black gram, coriander seeds, cumin seeds and red chillies one by one. Once they become cool down grind them into a coarse powder in a mixer grinder. Soak tamarind in just enough water for 15 minutes and extract the tamarind pulp.
🌸. When lady finger pieces become soft., add tamarind pulp and ground powder. Mix thoroughly and sauté on low flame for 2/3 minutes.
🌸. Prepare the tempering using tempering ingredients and pour onto the prepared curry.
🌸. Now the delicious lady finger tamarind spiced curry is ready to serve. Mix the tempering just before serving to retain its crunchiness.
