Beetroot leaves rasam
Yes, you heard it right. Healthy and nutritious rasam is prepared with beetroot leaves. It was a longtime pending post. I got few beetroot leaves from my friend’s home garden. Needless to mention the health benefits of beetroot and leaves. It’s important once in a while to include healthy recipes in our diet Here I present tasty beetroot leaves rasam which can be served as an accompaniment to hot steamed rice or can be consumed as soup. Ingredients:
Beetroot leaves: 5/6 nos
Rasam powder: 2 tsp
Turmeric: Generous pinch
Toor dal: 2 tbsp
Salt: As required
Water: 750 ml.
Tamarind: Lemon sized
Green chilli: 1 no.
Tempering:
Oil: 1 tsp
Mustard seeds: 1 tsp
Cumin seeds: 1 tsp
Asafoetida: A pinch
Method of preparation:
🌺. Take 5/6 nos. Of beetroot leaves, rinse well with water and keep aside.
🌺. Heat kadai and pour oil for tempering. Put mustard seeds and cumin seeds. When mustard splutter add a pinch of asafoetida.
🌺. Now add finely chopped beetroot leaves and sauté for two minutes or till raw smell goes away.
🌺. Meanwhile cook two tbsp of Toor dal in a pressure cooker and keep it ready.
🌺. Now mash the Toor dal and add to the sautéed beetroot leaves.
🌺. Also add tamarind extract , water and bring it to boil.
🌺. Add rasam powder and boil for two more minutes. Switch off the flame.
🌺. Now the healthy and tasty beetroot leaves rasam is ready to serve.
🌺. Serve beetroot leaves rasam with hot steamed rice along with other accompaniments.
