Sweet potatoes are always awesome and sweet. Today I’ve prepared baked sweet potato fries with a desi twist which is paired with homemade sauce and yellow pumpkin soup. This combo is a huge hit and can be prepared very easily for gatherings. Here I present sweet potato fries(Baked) and pumpkin soup to relish during any special occassion. Baked sweet potato fries:

Ingredients:

Sweet potatoes: 3 nos.

Oil: 1 tbsp 

Salt: As required 

Asafoetida: Generous pinch(Desi twist)

Oregano: 1 tsp

Method:

 🍠 Rinse thoroughly sweet potatoes and peel the skin. Chop them into bite size pieces. Immerse them in cold water for 30 minutes to remove extra starch.

🍠 After thirty minutes drain water completely. Add oil, salt, asafoetida and oregano to the sweet potato pieces.

 

🍠Bake them in a preheated oven @190 degrees for 18 minutes. Serve hot with homemade sauce. 

Homemade sauce:

Mix One tbsp of corn flour with enough water and boil for five minutes. Add little Red chilli powder, red chilli seeds, salt and two tsp of sugar and mix thoroughly. Boil it for one more minute. Transfer the baked sweet potato fries and sauce into serving bowls and enjoy!!

Pumpkin soup:

Ingredients:

Yellow pumpkin: Small part(Chopped pieces one cup approximately)

 Onion: 1 no.

Garlic flakes: 2 no.

Pepper powder: 1 tsp

Salt: As required 

Butter: 1 tsp

Method of preparation:

 🎃. Take small piece of pumpkin, peel the skin and chop it into fine pieces. Also chop the onion into pieces. Now transfer the chopped pumpkin pieces, onion pieces and garlic flakes into a pressure cooker. Add required amount of water into it.

🎃. Pressure cook them for two whistles on medium flame. Switch off the flame and allow the pressure to completely settle down. 

🎃. Open the lid of the pressure cooker and transfer the mixture into a mixer grinder. Grind once or twice using pulse button. 

🎃. Heat kadai and put little butter into it. Add the pumpkin purée and water too into it. Mix well and bring it to boil. 

🎃. Season with salt and pepper powder. Switch off the flame and transfer the soup into serving bowl. Garnish with fresh cream n coriander leaves. 

Baked sweet potato fries with sauce and pumpkin soup are ready to enjoy!!
