Ava pulihora 

This is traditional recipe of Andhra Pradesh. Recipes made with Ava podi/mustard seeds powder are pretty much popular in North coastal Andhra. This is also no exception. Pulihora is made with tamarind pulp and at the last ground mustard powder is added to the pulihora. This pulihora is rested for two hours minimum to infuse flavours after preparing it. Here I present Authentic Ava Pulihora to tantalize our taste buds. Njoy Cooking, Serving n Savoring!

Ingredients:

Rice: 2 cups 

Tamarind : 2 Big lemon sized

Salt: As required 

Mustard seeds: 1 1/2 tsp

Turmeric: generous pinch

Green chillies: 2/3 nos.

Curry leaves: Few

Home made sambar powder: 2 tsp 

Tempering

Oil: 2 tbsp 

Mustard seeds: 1 tsp 

Bengal gram: 1 tsp

Black gram: 1 tsp 

Asafoetida: A pinch

Red chillies: 2/3 nos.

Cashews: Few

Peanuts: Few

Sesame seeds: 1 tbsp

Method of preparation:

🌾. Take two cups of rice and cook It in a pressure cooker adding required amount of water. Keep aside. 

🌾. Meanwhile soak tamarind in enough water and keep aside till we use. 

🌾. Prepare tempering using tempering ingredients. After preparing tempering add sesame seeds and switch off the flame. Transfer only the tempering into a large mixing bowl leaving oil back in the kadai.

🌾. In the same Kadai , now add asafoetida and pour the tamarind pulp which is extracted from the soaked tamarind.

🌾. Also add 2/3 nos. Of chopped green chilies and required amount of salt. Mix thoroughly and cook on low to medium flame.

🌾. Also add roasted peanuts and mix thoroughly. 

🌾. Add curry leaves , home made sambar powder and mix thoroughly. 

🌾. Cook the mixture on flame till it became into a thick paste like consistency.

🌾. Transfer the paste into the vessel containing tempering. Add cooked rice and mix well. Allow it to come to normal temperature.

🌾. Now grind 1 1/2 tsp of mustard seeds into fine powder and add to the pulihora . 

🌾. Mix thoroughly and keep aside for two hours so that all flavours infuse into the rice. 

🌾. Now Andhra delicacy ava pulihora is ready to serve.
