Aratikaya masala kura
This is one amazing curry usually prepared in Andhra homes, small mess or hotels. Chopped onions, ginger and garlic are sautéed in tempering and chopped raw plantain cubes are added and cooked furthermore till they become soft. Here I present delicious aratikaya masala kura which is a great accompaniment to hot steamed rice dolloped with ghee. Njoy Cooking, Serving n Savoring!

Ingredients:
Raw banana/plantain/aratikaya: 3 nos.
Onion: 2 nos.
Ginger: 1 inch piece
Garlic: 4/5 flakes
Green chillies: 2 nos.
Salt: As required
Turmeric: A pinch
Tempering:
Oil: 1 tbsp
Bengal gram: 1 tsp
Black gram: 1 tsp
Mustard: 1 tsp
Cumin: 1 tsp
Asafoetida: A pinch
Curry leaves: A sprig
Method of preparation:
🌷. Take 3 raw plantains, peel the skin and immerse in water till we use.
🌷. Heat kadai/Pan and pour oil for tempering. Add mustard, cumin, bengal gram and black gram. When mustard splutter, add a pinch of asafoetida.
🌷. Now add chopped, ginger, garlic flakes and green chillies. Sauté them for a minute.
🌷. Now add thin slices of onions and sauté them till they turn into translucent. Also add a pinch of salt and turmeric.
🌷. Now add chopped plantain cubes and mix thoroughly.
🌷. Sauté them till they turn into soft. Add required amount of salt and switch off the flame. Transfer into a serving bowl and serve hot with steamed rice.
